I think you need to have a look at the Quote Colors homepage
(http://quotecolors.mozdev.org/). There is a "Known issues" and "Todo" list,
everything that's in the first list does not work right now, and the second
one is a kind of wish list. Both lists contain what you are asking for ;-)
In short, quote coloring in compose window is not implemented at the moment,
but it is a high priority feature that will be added if it's possible at
all. Currently it looks like I've found a solution for plain text composing,
but it still needs some testing.
