[Greasemonkey] Gmail... Cut Paste

So here is what I would like to do with greasemonkey... 

When I hit the reply button in Gmail I want this email address that is in
the body of the message to be put into the "to:" field of the message and I
want that email address to be removed from the body of the message.

I know some javascript and a lot of HTML. My issue is that I can't seem to
be able to find the source of the Gmail page correctly because it is all
Ajax-a-licious. For example its hard to do an onClick() of the reply button
when I don't know what it is called. Does anyone have any hints for working
with Gmail with greasemonkey? or an example script that I could learn from?
