[Enigmail] Configuring default Key Selection

I tried these instructions last night.

Results;

All emails are sent encrypted by default including to addresses that
there is not a key for.

e.g I sent an email to a fictional address for which there is no key:
fred at hdakhdasj.comb.  The email was encrypted, but I don't know why!
